START WITH THE SIZZLE A smash burger is all about the first few seconds. We press fresh beef onto a hot griddle so the edges lace into a crisp, caramelized crust while the center stays juicy. WHY WE SMASH Smashing puts more of the patty in direct contact with the steel, and that contact is where the flavor comes from. The browning on the edges is the same reaction that gives toast and roasted coffee their depth, and it only happens when the surface is hot and dry. One firm press is all it takes. After that, we leave it alone. THE RIGHT BEEF, THE RIGHT HEAT We start with fresh beef and roll it into loose balls so the meat stays tender. The griddle runs hot enough that the patty sears the moment it lands. Too cool and you steam the beef. Too hot and you burn the lace before the middle is ready. Our crew learns to read the sound, the color, and the smell long before they ever look at a timer. LESS FUSS, MORE FLAVOR The method is simple by design: good beef, real cheese, a toasted bun, and the confidence to let the griddle do the work. BUILD IT LIKE WE DO Cheese goes on right after the flip so it melts into every crack. The bun gets a quick toast on the same griddle and soaks up a little of that beef flavor. Then come pickles, onions, crisp lettuce, tomato, and a generous spoonful of sauce. Order matters here: sauce on the bun, crunch near the top, and a hot patty stacked right before it reaches your tray. TRY IT AT HOME Want to smash at home? Use a heavy pan, a firm spatula, and a ball of beef no bigger than a golf ball. Press hard for a few seconds, season well, and flip only when the edges are deeply browned. When you want the real thing, the griddle is hot daily and we saved you a seat.
